What the heck are activated almonds?

Activated almonds are definitely a new craze in the health food world, however did you know that this wonderful and nutritious way of eating nuts and seeds has been around for thousands of years?

If you haven't heard of activated almonds before, then it is definitely something worth knowing about as there are definite health advantages to eating activated nuts over inactivated nuts. The traditional process of activating nuts and seeds involves soaking, sprouting and dehydrating, in order to improve their digestibiltity and nutrition.

Nuts are a very nutritious food, containing plenty of healthy fats and proteins which make a perfect snack, however they are quite difficult for humans and other animals to digest because.  Located in the skin of all nuts, seeds and grains is an enzyme-inhibitor called phytic acid which attracts and binds with minerals and vitamins from our food in digestive tract, such as calcium, magnesium, copper and zinc. This process leads to improper absorption of nutrients into our bloodstream for usage around the body, leading to vitamin and mineral deficiencies. Vitamins and minerals have so many important roles within the body including, energy production, maintaining blood pressure, cell communication, strengthening bones, supporting our immune system, and supporting metabolism. By consuming unactivated nuts regularly, then you are not getting the full amount of nutrition out of your food as you could. Theis phytic acid is also very irritating on the lining of the gut, which is why consuming nuts cause digestive problems for some individuals including bloating, indigestion and irritable bowel type symptoms.

The purpose of phytic acid is an important one for the the life cycle of the seed. In nature, the seed's purpose is to germinate and grow into a plant, fulfilling its destiny as a seed. When seeds are consumed, the aim of the seed is to pass through the digestive system of an animal or bird, in order for the seeds to be sprout in the manure. The phytic acid in the seed binds with these vital nutrients in the animals digestive system so nutritionally it has what it needs to successfully grow into a plant. Unfortunately this process gives life to the seed but subtracts nutrition from us!

Traditional cultures understood that they had to activate and prepare their grains, nuts and seeds in a certain way to neutralize the anti-nutrients or enzyme-inhibitors in the husk, to allow for optimal digestion and increase nutrition. Failure of preparing grains properly would lead to a belly ache, digestive and other health issues. Unfortunately nowadays we have lost these traditional practices of seed and grain preparation, and hence there is an ever increasing rate of digestive issues and nutritional issues related to their consumption and over-consumption, particularly of processed wheat and flour based foods. 


           How to activate your own nuts and seeds?


 Step 1: Soak your almonds in water with a pinch of celtic sea-salt for 8-12 hours to deactivate the phytic acid.


Step 2: Rinse the nuts, drain, and spread evenly on a baking tray. Sprinkle with more sea salt.


Step 3: Place your nuts in a very low over of 50 degrees for 12-24 hours until the nuts dehydrate. They should be crispy to bite into, with no moisture present.


Step 4: In this dehydrated state they will last for months in an airtight container.


* The low cooking temperature is necessary as to not denature the delicate monounsaturated fatty acids in the nut/seed which are very heat sensitive, and oxidise and go rancid at higher temperatures making them inflammatory on the body.
